
El got this recipe from Pari. This is similar to a recipe for German Pancakes that we sometimes eat. Only that recipe has a few more eggs, and you cook it in a cake pan. I like this one because it doesn't taste like eggs quite as much, yet it still has plenty of protein and no sugar. I LOVE the shape! We made 2 batches- it turns out cuter than German Pancakes because you put it into a pie plate. It got me thinking after looking at the picture, you could fill it up with fruit since it is like a bowl, or you could fill it up with ham, cheese, tomatoes, peppers, etc. It looks like a bowl!
Ingredients:
1/2 c. milk
2 eggs
1/2 cup flour
1 T. butter
Preheat oven to 400 degrees. Put butter in glass pie plate and melt in oven. Mix milk, eggs, and flour in bowl and pour in hot pie plate. Cook 20-25 minutes until pancake is golden brown and high and puffy. Rush it to the table if you want it puffy or let it settle for a minute like you see in the picture. Lauren likes it with syrup. I liked it with yogurt and blueberries and blackberries. Lemon juice and powdered sugar is also a yummy option.
