Pumpkin Spice Bars

I served these as a bedtime snack the other night. I left off the cream cheese frosting and sprinkled powdered sugar over them instead. We ate it warm with a scoop of vanilla ice cream. Let's just say I had sweet dreams that night. It was perfect!

Ingredients:
4 eggs
2 cups sugar
1/2 cup veg oil
1/2 cup sugar free apple sauce
1 can pumpkin (16 oz)
2 cups flour
2 tsp. baking powder
2 tsp. ground cinnamon
1 tsp baking soda
1/2 salt
1/2 tsp ginger
1/4 tsp cloves
1 cup raisins (don't leave them out, they are yumyy!)

Powdered sugar sprinkled on top or cream cheese frosting. 1/2 cup chopped walnuts, optional.

Heat oven to 350. Grease jelly roll pan (cookie sheet with sides). Beat wet ingredients. Stir in dry ingredients. Mix in raisins. Pour batter into pan. Bake 25-30 minutes or until light borwn; cool. Spread wiht frosting and walnuts. Refrigerate left-overs.
