Banana Cake

I got this recipe from Nettie. A fun alternative to banana bread. It is a nice and moist cake. I like heating up a piece in the microwave for about 10 seconds just to make it a little warm.

3 ripe bananas (set aside 3 tbls. for the icing)
1 cup butter, mostly melted'
2 cups sugar
2 eggs
1 cup buttermilk
1/2 tsp. vanilla
3 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt

Cream wet ingredients together. Mix dry ingredients, then add to wet mixture. Bake at 350 degree in greased cake pan for 40-45 minutes.

Frosting
1/2 cup butter
1 tsp. lemon juice
3 tbls. mashed banana
2 cups powdered sugar

Cream together. It has the consistency of somewhere inbetween a frosting and a glaze. Frost the cake when it is mostly cook (it can still be a little warm).
