Becky's Lasagna

One of my favorite meals that Grandma used to make was lasagna with ricotta cheese. My kids seem to think that is too heavy, because last time I made it, they said, "We like Becky's better!" So to appease my kids, I asked her for the recipe and here it is. This is much less complicated than I how I make mine. It is a little lighter and less seasoned- no wonder they prefer it ;0)

Here is my quick no meat lasagna:

1 can Hunts spaghetti sauce
9-12 cooked lasagna noodles

Mix together: (these are very approximate)
2 c. cottage cheese
1 c. shredded mozarella cheese
or
1 c. colby jack (I really like the flavor from this)
1/4 c. parmesan cheese (doesn't matter if it is grated or shredded)
shake of Italian seasoning
a bit of cream cheese if you want it to be really yummy
or whatever cheese you have on hand. Ricotta would be good mixed in there too but I love the cottage cheese.

Layer sauce, 3 noodles, cheese mixture, etc. 8x11 or 9x13 pan. Then after last layer of noodles, dump the rest of the sauce on the top, and cover with more cheese!
Bake 375 for 30-45 min unti hot and bubbly. It may be a little runny, but will thicken as it stands. We just eat it runny and call it lasagna soup:)
