Okay- this is my new favorite dinner. It seems that every Mexican dish I make is my "favorite". I guess I really like Mexican food! Got it from Sister Lee at our RS Summer Dinner.
1/2 red pepper, chopped
1 small onion (optional)
1 tsp. minced garlic
2 tbsl. olive oil
Saute the above ingredients about 5 minutes.
Then add 1 can black beans (drained and rinsed), 3 oz. of cream cheese, 1/2 tsp. salt, and 2 tbls. fresh cilantro, chopped.
While that slowly heats, pull out a can of refried beans. Spread a thin layer in the middle of a flour tortilla, then spread about 1/4 cup of the bean mixture in the middle. Roll on each side.
After all of the tortillas are places in a 9x13 baking dish, pour a can of green enchilada sauce over them. Then sprinkle grated cheddar cheese on top.
Bake on 350 degree oven for about 30 minutes. They are the best ever!
