This was a favorite amongst the kids and our family. It is kind of like a "healthier" version of eating an oatmeal cookie for breakfast.
Ingredients (feeds about 4)
1 1/2 cups quick oats
1/2 cup sugar
1/2 cup milk
1/4 cup butter, melted
1 egg
1 tsp baking powder
3/4 tsp salt
1 tsp vanilla
Combine all of the ingredients. Pour into greased 9x13 in. pan. Bake at 350 degree for 30 minutes. If you double the recipe, use 2 pans. You want it to be very flat so it is kind of krispy on top and moist in the middle. Serve in a bowl with milk and fruit if desired. The kids liked it better without milk because it was sweet and warm.
