These muffins are moist, delicious and sweet, with cream cheese hidden inside! They almost take like a muffin with cheesecake in the middle. Perfect for when you want to give a special treat to someone. They turned out very pretty, too.
Preparation Instructions
For the muffins:
Preheat oven to 375°F. Grease/spray a 12-cup muffin tin and set aside.
In a large bowl, combine flour, half the sugar, baking powder, and salt. Once combined, make a well in the center.
In a separate bowl, stir together milk, oil, and eggs. Pour into the dry ingredients. Stir until dry ingredients are moistened. Batter will be thick.
Combine cream cheese and remaining sugar. Fold half of this mixture into the muffin batter.
Spoon batter into the greased muffin pan, filling cups 2/3 full. Spoon the remaining cream cheese mixture onto the tops of the muffins and press into the middle of the muffin.
For the topping:
In a large bowl, combine the flour, sugar, and butter (softened). Mix well. Sprinkle mixture generously over the top of each muffin.
Bake for 30 minutes or until tops are golden brown.
Makes 12 muffins.

3 cups All-purpose Flour (I did half flour, half oats)
2 cups Sugar, Divided
4 teaspoons Baking Powder
1 teaspoon Salt
⅔ cups Milk
½ cups Vegetable Oil
2 whole Eggs
8 ounces, weight Cream Cheese, softened

¼ cups All-purpose Flour
½ cups Sugar (I used 1/4 cup and am very glad. It would have been too sweet the other way)
⅛ cups Butter, Softened
