El loved this last night for dinner. I served slices of Deli ham and apple sauce with it, and used red potatoes. I like it because there isn't much fat and you also get your dairy serving. You can leave the skin on for the added protein. Delicious!
6 medium potatoes
3 tbsp. margarine
1 small onion (optional)
1 tsp. salt
1/4 tsp. pepper
2 1/2 cups milk
1 tbsp. margarine
Heat oven to 350 degrees. Grease 9x13 pan. Scrub potatoes and very thinly slice. Heat 3 tablespoons margarine in pan over medium heat. Cook onion in it about 2 minutes, stirring occasionally. Stir in flour, salt, and pepper. Cook, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
Spread potatoes in casserole; pour sauce over potatoes. Dot with 1 tbs. margarine. Cover and bake 30 minutes. Uncover and bake 60-70 minutes longer or until potatoes are tender. Let stand 5 to 10 minutes before serving.
