Okay- this is the best ever. I found it on a new blog I'm following: Pioneer Woman. Oh yeah- this is delish!
4 cups dried macaroni
1/4 cups butter
1/4 cups flour
2 1/2 cups milk
2 tsp. (heaping) dried mustard
1egg, beaten
1 pound (4 cups) cheese (cheddar, or a blend)
1/2 tsp. seasoned salt (Lawry's)
1/2 tsp. pepper
optional spices, cayenne pepper, paprika, thyme
Directions:
Cook macaroni until firm. Drain.
In a small bowl, beat egg.
In a large, heavy pot, melt butter and spirnkle in flour. Stir over medium-low heat, for 5 minutes. Pour in milk, add mustard, and stir until smooth. Cook for 5 minutes until very thick. Reduce heat to low.
Take 1/4 cup of sauce and slowly pour it into beaten egg, whisking constantly to avoid cooking eggs. Whisk together until smooth.
Pour egg mixture into sauce, whisking constantly. Stir until smooth.
Add in cheese and stir to melt.
Add salts and pepper. Taste sauce and add more if needed.
Pour in drained, cooked macaroni and stir to combine. Either serve immediately, or top with cheese and bake for 20-25 minutes until golden on top.
