Mandarin Salad

This salad is sweet and light. The girls seemed to love it. We served it with Sweet Potatoe Oven Baked Fries. So nutritious and delicious!

1/2-1 bag any type salad leaves
2-3 ribs of celery or 1 cucumber
1 can mandarin oranges, drained
2-3 green onions
1 cup grapes, cut in half
1/2 cup pecans, coarsely chopped

(I head pears and some chicken breasts from the crock-pot and also used those)

Toss all ingredients together. Just before serving, toss with dressing.

Dressing:
2 tbls toasted sesame seeds (I didn't have any on hand so I sprinkled sunflower seeds on top).
3 tbls honey or sugar
1 tsp. salt
dash pepper
1/4 cup salad oil (canola)
2 tbls vinegar

Stir together thoroughly. Keep refrigerated if not serving immediatly.
