Peppermint Pie


I got his recipe from Darlene after eating at Enrichment Meeting. This pie did enrich me, and it made me feel Merry and Bright.

And look at how darn easy it is. Less really is more in this case.

Ingredients:
1 chocolate pie crust
1/2 gallon peppermint ice cream
1 1/2 cups Cool Whip
1 cup chocolate chips

Soften the ice cream and cool whip. Stir them together.

Then mix in chocolate chips. Place into pie crust. Freeze at least 2 hours. Drizzle with chocolate syrup to make it look pretty, or cover with crumbled Oreo cookie crumbs.
